Prepare

  1. Disperse the gums

    In a completely dry bowl, thoroughly combine the sugar, dextrose, skim milk powder, guar gum, xanthan gum, and salt. Break up every visible lump and make sure the tiny gum quantities are evenly diluted through the other powders before they touch liquid.

  2. Blend the liquids

    Combine the buttermilk, cream, almond butter, honey, and almond aroma in a tall blending jug. Use an immersion blender until the almond butter is completely dispersed, keeping the blade submerged so the mixture does not become foamy.

  3. Add the dry mixture

    With the immersion blender running, gradually sprinkle the dry mixture into the moving liquid. Blend for another 30-45 seconds until completely smooth and uniform without deliberately whipping in air.

  4. Age the base

    Cover and refrigerate for 4-12 hours so the milk powder and gums can hydrate and the almond flavor can integrate. Stir gently before filling if any separation is visible.

  5. Fill and freeze

    Pour the approximately 443 g base into the NC300EU pint, confirm it is below the molded MAX FILL line, fit the storage lid, and freeze on a level surface for at least 24 hours. Leave the optional almonds out of the frozen base.

  6. Finish

    If using the optional sliced almonds, toast them in a dry pan until lightly golden and fragrant, then cool completely. Scatter them over each serving rather than processing them into the base so they remain crisp.

Spin plan

Before

Confirm the frozen surface is level, there is no tall hard hump, the pint remains below MAX FILL, and the base is within -12°C to -25°C.

First cycle

Run Ice Cream once.

After

If creamy, stop. If safely powdery or crumbly, scrape the sides inward and RE-SPIN once. Do not add liquid automatically. If too soft, do not keep spinning; refreeze until firmer.

Leftovers

Smooth leftovers flat before refreezing. When hard, rerun Ice Cream rather than RE-SPIN; the refreeze behavior of this formula has not yet been tested.

Development notes

Inspired by jhermann’s Almond Buttermilk (Deluxe)/, but rebuilt directly for one NC300EU pint rather than geometrically scaled. This conventional-sugar version replaces the source recipe’s polyols, glycerin, amaretto, GMS, CMC, inulin, and multi-gum premix with cream, honey, dextrose, skim milk powder, and a restrained guar-xanthan blend.

  • Formula values describe the approximately 443 g frozen base; the optional almond topping is excluded.
  • PAC uses dextrose monohydrate FPDF 1.9/POD 0.75, honey sugars estimated at 81% with invert-sugar FPDF 1.9/POD 1.3, lactose PAC 1.0/POD 0.2, and salt FPDF 5.9.
  • The 0.50 g guar and 0.15 g xanthan provide approximately 0.15% active hydrocolloid in a roughly 3.3:1 ratio. Do not add another stabilizer blend on top without recalculating the active gum dose.
  • Nutrition and composition are estimates based on the current AH buttermilk and cream labels, BioToday almond butter, and representative dextrose, honey, and skim-milk-powder composition. Product substitutions require recalculation.
