Tangy Greek Frozen Yogurt
A clean, milky frozen yogurt with the bright sweet-tart flavor and soft-serve character of a classic froyo shop.

Tart yogurt base
The small print names the exact — often Dutch — products this recipe was calculated with. Equivalents work, but if a label differs materially, the formula deserves a recalculation.
Prepare
Disperse the powders
In a completely dry bowl, thoroughly combine the skim milk powder, sugar, dextrose, guar gum, and salt. Break up every visible lump and make sure the guar is evenly diluted before it touches liquid.
Blend the dairy
Combine the Greek-style yogurt, skim milk, glycerin, and strained lemon juice in a tall blending jug. Blend briefly with the blade submerged until smooth, without deliberately whipping in air.
Add the dry mixture
With the immersion blender running, gradually sprinkle in the dry mixture. Blend for another 30–45 seconds until completely uniform and no powder remains. The liquid base should taste clean and milky, slightly sweeter and more tart than the intended frozen result, with no distinct lemon flavor.
Age the base
Cover and refrigerate for 4–12 hours so the milk powder and guar hydrate and the cultured-dairy flavor integrates. Taste the base cold before filling. Yogurt acidity varies by brand, so record the brand and perceived tartness rather than adding extra lemon to the first test.
Fill and freeze
Stir gently if any separation is visible, pour the approximately 458 g base into the NC300EU pint, confirm it is below the molded MAX FILL line, fit the storage lid, and freeze on a level surface for at least 24 hours.
Spin plan
Confirm the frozen surface is level, there is no tall hard hump, the pint remains below MAX FILL, and the base is within -12°C to -25°C.
Run Lite Ice Cream once.
If creamy and softly spoonable, stop. If safely powdery or crumbly, scrape the sides inward and RE-SPIN once without automatically adding liquid. Extra processing can make this low-fat base too soft.
Smooth leftovers flat before refreezing. When hard, rerun Lite Ice Cream rather than RE-SPIN; refreeze behavior and the fate of the soft-serve texture have not yet been tested.

Development notes
The flavor target is classic plain tart frozen yogurt: clean cultured dairy, clear sweetness, a bright acidic finish, and no recognizable vanilla or lemon-dessert flavor. Pinkberry’s current Original Frozen Yogurt ingredient statement lists nonfat milk, sugar, nonfat yogurt, nonfat yogurt powder, fructose, dextrose, citric acid, and guar gum. Menchie’s describes its comparable plain tart flavor as creamy and classic with tart yogurt flavor and tangy citrus notes. These are flavor and ingredient-system references, not NC300EU formulas.
This version uses inexpensive AH Yoghurt Griekse stijl 0% vet as its calculation benchmark. It is rebuilt directly for one NC300EU pint and does not attempt to copy a commercial soft-serve premix. Greek-style yogurt provides the cultured flavor and most of the protein; skim milk powder supplies some of the milk solids that commercial formulas obtain from nonfat milk and yogurt powder.
Sugar preserves the familiar clean sweetness, while dextrose and a measured 7 g glycerin provide more freezing-point depression per unit of sweetness. The restrained 6 g lemon dose replaces the commercial citric-acid adjustment with an ordinary kitchen ingredient. It should register as extra yogurt tang rather than lemon; the first physical test must verify that assumption because yogurt acidity and lemon strength both vary.
At an estimated 438 kcal and 29 g protein per pint, this is best described as healthy-adjacent and high-protein rather than low-sugar. A half-pint is approximately 219 kcal and 15 g protein. The recipe deliberately excludes protein powder and high-intensity sweeteners so the first test can judge the clean sweet-tart yogurt flavor without chalkiness or sweetener aftertaste.

- Formula values describe the approximately 457.8 g base. The target is immediate soft-serve-style eating from an approximately -18°C freezer, not long-term scoopability without reprocessing.
- PAC uses sucrose FPDF 1.0/POD 1.0, dextrose-monohydrate FPDF 1.9/POD 0.75, glycerin FPDF 3.7/POD 0.7, lactose FPDF 1.0/POD 0.2, and salt FPDF 5.9. The very small lemon-sugar contribution is provisionally modeled as sucrose.
- The estimated PAC includes approximately 29 g dairy lactose and all product-label-equivalent salt. Different yogurt, milk-powder, and dextrose labels will move PAC, POD, total sugars, and protein.
- The 7 g glycerin is approximately 1.5% of the base. It supplies meaningful freezing-point depression while allowing less added sugar than a shop-style all-sugar formula; it is not a pantry-neutral substitution.
- The 0.5 g guar is approximately 0.11% active hydrocolloid. The dose is deliberately restrained because thick yogurt, dairy protein, and skim milk powder already contribute body.
- At roughly 25% estimated total solids, this is leaner than conventional ice cream. The yogurt protein, milk powder, glycerin, guar, and Lite Ice Cream program are expected to make it workable, but a powdery first spin remains a test risk.
